Potato and Leek Soup

In honor of Burns night on January 25th, I offer my favorite soup as I do not suggest Haggis as a very good choice for the trail.

  • 1 cup dehydrated leeks
  • 1 cup dehydrated potato slices (you can use instant mashed as well)
  • 1 beef bouillon cube (or Not Beef cube for vegetarians)
  • 1/2 tablespoon powdered milk

Put all ingredients except milk in a bag or container. Store powdered milk separately.


On trail: Add 1.5 to 2 cups hot water to soup, stir and let sit to re hydrate.  Eat as is or add milk powder for a creamier soup.
